Ingredients
• 1 lb lean (85-90%) ground meat or ground turkey breast
• 1 can black beans, drained and rinsed
• 1 cup frozen or fresh corn or canned (drained and rinsed)
• 1 cup medium salsa
• 1/2 tsp Mrs Dash fiesta lime seasoning
• 1 package (8 1/2 oz) corn bread muffin mix
• 3/4 c. reduced sodium chicken broth
• 1 egg
• 3/4 cup shredded reduced fat Mexican cheese
Directions
Preheat oven to 400 degrees. Brown meat in skillet coated with non-stick spray. Add black beans, (1/2 cup)corn, salsa and Mrs. Dash. Simmer for 2 minutes.
Spray pyrex baking dish with non-stick spray and layer turkey mixture at botton.
In a medium bowl mix muffin mix with egg and broth an other 1/2 cup corn. Stir well to combine. Spread corn muffin mix over top of ground meat to cover. Sprinkle with cheese. Bake 15-20 minutes until edges are lightly browned. Remove from oven and cut into 8 squares.
