Black Bean & Sweet Potato Salad

Ingredients
• 1 large sweet potato cooked, peeled chopped into dice-sized pieces

• 1 can black beans, rinsed

• 1 cup chopped into small cubes, fresh, frozen or jarred mango

• 2 kiwi, peeled and sliced into quarters

• 1/2 tsp chipotle pepper

• 1/4 orange juice

Directions
Mix together all ingredients and serve as side or main salad.
