Savory Summer Salad
Ingredients:
- 2 ears white corn - shuck and boil for 3-4 minutes
- 1 can garbanzo beans - drained and rinsed
- 1 cup grape or cherry tomatoes - cut in half
- 1 zucchini - sliced
- 1 red pepper & 1 green pepper - chopped
- 1/4 cup Mario black sliced olives
- 1/2 cup Mario green sliced olives
Dressing
- 1/2 cup chopped purple onion
- 1/2 package of dry garlic and herb salad dressing
- 3 tablespoons light olive oil
- 4-6 tablespoons red wine vinegar
- 2 garlic cloves crushed
- 2 TBSP fresh cilantro, chopped
- 1/2 TBSP red pepper flakes
Directions:
Put all vegetables into a bowl. Mix dressing ingredients together in
separate bowl. Pour dressing overtop vegetables and let chill for 1 hour
before serving
