Ingredients
- 3 large sweet potatoes, peeled and cut into 1-inch thick rounds
- 3 tbsp butter, melted
- 1 tbsp olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ cup hot honey
- fresh thyme or parsley for garnish (optional)
Directions
- Preheat the oven to 425°F.
- Arrange the sweet potato rounds in a baking dish or cast-iron skillet.
- Drizzle with the melted butter and olive oil. Season with the salt, pepper, and garlic powder.
- Roast for 25 minutes, then carefully flip each round.
- Continue roasting for another 20 to 25 minutes, until tender and caramelized.
- Drizzle the hot honey evenly over the sweet potatoes and return to the oven for 5 minutes to let the glaze bubble and thicken.
- Spoon the glaze over the potatoes before serving and garnish with fresh thyme or parsley if desired.
Chef’s Notes
- Want to take it over the top? Sprinkle with crumbled bacon and a little goat cheese just before serving. The sweet, spicy, smoky, and creamy combination is absolutely irresistible.
