Shopping List
Meatballs:
- 1/4 small tart apple, grated
- 1/4 small red onion, grated
- 1 tsp minced garlic (1 cloves)
- 1/4 tsp ground cinnamon
- 1/2 tsp smoked sea salt
- 1/4 tsp freshly ground black pepper
- 1 large egg white
- 1 pound ground chicken
- 1/4 c feta cheese
- 1/2 tsp Worcestershire sauce
- 1/4 tsp liquid smoke
Peanut Butter BBQ Glaze:
- 1/2 c ketchup
- 1 T maple syrup or honey
- 1 tsp balsamic glaze
- Pinch smoked sea salt
- Drop of liquid smoke
- 3 T Betsy’s Best Gourmet Peanut Butter
Instructions
- Spray a mini muffin tin with cooking spray and set aside. In a large bowl, combine all ingredients to make the meatballs. Divide the mixture into quarters, then separate each quarter into 4 balls. Arrange meatballs on the prepared baking sheet. Bake for 15 minutes.
- Meanwhile, combine sauce ingredients and stir until peanut butter dissolves into ketchup. Remove meatballs from oven and top with sauce, placing a dollop on top of each ball and return to oven for 5-10 min more, or until cooked through.
- Can’t get enough of the bite sized balls? Turn this recipe into a meatloaf by simply placing in a bread pan and increase your baking time to 40 minutes without the sauce. Remove after 40 min, add sauce and bake an additional 5-10 min or until done.
