Avocado Mango Salad

Serves: 4-5

Ingredients

  • 2 cups avocados, diced
  • ½ cup red onion, diced
  • 2 cups mangos, diced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup goat cheese, plus more for garnish
  • balsamic glaze, to drizzle
  • ¼ cup olive oil
  • ¼ cup lime juice
  • salt and pepper, to taste

Directions

  1. In a large bowl, mix all of the ingredients together and then let it chill in the refrigerator for at least 20 minutes.
  2. When you are ready to serve, sprinkle goat cheese on top and drizzle with desired amount of balsamic glaze.!
