Plant-Based Baked Spinach Artichoke Dip

Serves: 4

Ingredients

     
  • 1 tbsp olive oil
  • 3 tbsp garlic, minced
  • 12 oz marinated artichoke hearts, drained and chopped
  • 4 cups baby spinach, diced
  • ½ cup plant-based mayo
  • 8 oz plant-based cream cheese
  • ½ tsp garlic powder
  • ½ cup plant-based Parmesan
  • salt and pepper, to taste
  • tortilla chips, for dipping

Directions

     
  1. Preheat the oven to 400ºF.
  2. Heat the olive oil in a large sauté pan over medium heat. Add the garlic and sauté for 1 minute, stirring frequently.
  3. Add the artichoke hearts and spinach, sauté until the spinach is wilted.
  4. Add the cream cheese, mayo, garlic powder, salt, and pepper. Stir to combine.
  5. Transfer to a baking dish, top with Parmesan, and bake for 15 minutes.
  6. Turn the oven to broil and cook for an additional 3–5 minutes, or until the top begins to brown and crisp.
  7. Allow to cool for 3 minutes. Serve with tortilla chips.
