Tomato Peach Burrata Salad

Serves: 6

Ingredients

Salad

  • 2 large tomatoes, sliced
  • 3 ripe peaches, sliced
  • 2 cups cherry or grape tomatoes, halved
  • 1 (8 oz) burrata cheese, drained
  • salt and pepper, to taste (optional)
  • 2 tbsp balsamic glaze, drizzled
  • fresh basil, chopped for
  • garnish (optional)
  • grilled bread, for serving (optional)

Balsamic Vinaigrette

  • ½ cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp kosher salt
  • 1 tsp minced garlic

Directions

  1. Arrange all of the tomatoes and peaches on a large platter.
  2. Add the balls of burrata cheese to the center of the platter.
  3. Drizzle with the vinaigrette dressing and balsamic glaze.
  4. Garnish with fresh basil, salt, and pepper.
  5. Serve with grilled French bread or crostini toast and enjoy!
